1/2 Chicken Chopped
6-8 Cups Chicken Broth
1 Large can Kidney Beans
1 Large can Garbanzo beans
1 Large can chopped Tomatoes with juice
1 Onion chopped
2 Cloves of Garlic (to taste)
1 Bunch Cilantro
Sautee onion and garlic until cooked then add broth and other ingredients to large
pot or Crock Pot. Simmer until chicken is cooked. When serving add shredded cheddar and mozzarella cheese, and tortilla chips.
This recipe is great because it is very versatile. Change it to your taste. If you are vegetarian, substitute vegetable broth and tofu or more vegetables. If you don't like garbanzo beans, substitute black beans etc. Experiment and have fun!
